SWLM has better colour, less dirt, and is brighter and clearer. But, the Edge Enhancement is terrible. But for some reason it
only lasts for about one hour of the movie which makes me think there were two teams monitoring the restoration. I've
noticed on a few SE that the first 2 seconds of the gunbarrel has bad interlacing issues. I've seen it on Thunderball and
same with Spy. Also, for some reason the original soundtrack (stereo?) was left off and only DTS and 5.1 Dolby are present.
The UE is the better of the two, EE or no EE.

How many of the UE's don't have the original audio?

It's worth pointing out that SPY was originally stereo and so the 5.1 upgrade shouldn't be too problematic. It's the mono films that really suffer.
